🍰 Halwai Style Milk Cake Recipe | Soft & Grainy Milk Cake at Home

Milk Cake is one of the most loved Indian sweets, especially during festivals like Diwali, Holi, Raksha Bandhan, and celebrations. This halwai-style Milk Cake recipe is simple, easy for beginners, and gives the same grainy, soft, and perfect brown layer like you get at sweet shops.

Follow this step-by-step recipe and impress everyone with your homemade mithai!


🥛 Ingredients for Milk Cake

  • Full-fat milk – 1 liter

  • Lemon juice or vinegar – 1 tbsp

  • Sugar – 1 cup

  • Ghee – 2 tbsp

  • Cardamom powder – ½ tsp

  • Pistachios – for garnish (optional)


🍳 How to Make Milk Cake – Step-by-Step Method

Step 1: Boil the Milk

  1. Heat 1 liter milk in a heavy-bottom pan.

  2. Stir occasionally so it doesn’t stick to the sides.

Step 2: Curdle the Milk Lightly

  1. When milk reduces to ¾, add 1 tbsp lemon juice.

  2. Milk should curdle very lightly (not fully like paneer).

  3. You should see small grains (danedar texture).

Step 3: Cook the Milk Mixture

  1. Add 1 cup sugar.

  2. Mix and cook until it becomes thick.

  3. Add 2 tbsp ghee and cardamom powder.

  4. Continue cooking on low flame until the mixture becomes dense.

Step 4: Caramel Flavor (Optional but Halwai Style)

  1. Remove 2 tbsp mixture into another pan.

  2. Heat until it turns brown.

  3. Add it back to the milk mixture and mix well.

Step 5: Set the Milk Cake

  1. Grease a steel container with ghee.

  2. Pour the mixture inside and press gently.

  3. Cover and keep it for 6–8 hours to set completely.

Step 6: Demould and Cut

  1. Once set, cut into blocks or squares.

  2. Enjoy your soft, grainy halwai-style Milk Cake!
