🍳 How to Make Milk Cake – Step-by-Step Method
Step 1: Boil the Milk
-
Heat 1 liter milk in a heavy-bottom pan.
-
Stir occasionally so it doesn’t stick to the sides.
Step 2: Curdle the Milk Lightly
-
When milk reduces to ¾, add 1 tbsp lemon juice.
-
Milk should curdle very lightly (not fully like paneer).
-
You should see small grains (danedar texture).
Step 3: Cook the Milk Mixture
-
Add 1 cup sugar.
-
Mix and cook until it becomes thick.
-
Add 2 tbsp ghee and cardamom powder.
-
Continue cooking on low flame until the mixture becomes dense.
Step 4: Caramel Flavor (Optional but Halwai Style)
-
Remove 2 tbsp mixture into another pan.
-
Heat until it turns brown.
-
Add it back to the milk mixture and mix well.
Step 5: Set the Milk Cake
-
Grease a steel container with ghee.
-
Pour the mixture inside and press gently.
-
Cover and keep it for 6–8 hours to set completely.
Step 6: Demould and Cut
-
Once set, cut into blocks or squares.
-
Enjoy your soft, grainy halwai-style Milk Cake!
